Pani puri |
Panipuri, a delightful street food in India, is widely enjoyed and goes by various names such as gol gappa or puchka. I have a homemade recipe to share with you for preparing panipuri.
Ingredients:
For the puri:
1 cup fine semolina (sooji or rava)
1/2 cup all-purpose flour (maida)
2 tbsp oil
Salt, to taste
Water, as needed
For the filling:
1 cup boiled and mashed potatoes
1/2 cup boiled and shelled chickpeas (chana)
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
1/4 cup finely chopped coriander leaves
1/4 tsp red chili powder
1/4 tsp roasted cumin powder
Salt, to taste
For the sweet and tangy water:
2 cups water
1/4 cup tamarind paste
2 tbsp jaggery (gur)
1 tsp black salt
1 tsp roasted cumin powder
1 tsp red chili powder
Instructions:
To make the puri, combine the semolina, all-purpose flour, oil, and salt in a mixing bowl. Gradually incorporate water into the mixture and knead it until you achieve a smooth and firm dough. Afterward, cover the dough and let it rest for 30 minutes.
- Next, take small portions of dough and roll them into small puri.
- Heat oil in a deep pan and deep fry the puri until they puff up and turn golden brown.
- Place the fried items on paper towels to remove any excess oil and keep them aside.
- To make the filling, combine the boiled potatoes, chickpeas, onions, tomatoes, coriander leaves, red chili powder, cumin powder, and salt in a mixing bowl. Mix well.
- To make the sweet and tangy water, combine water, tamarind paste, jaggery, black salt, cumin powder, and red chili powder in a mixing bowl. Mix well.
- To assemble the panipuri, make a small hole on the top of each puri using your thumb.
- Fill each puri with a spoonful of the filling mixture, and pour some sweet and tangy water over the filling.
- Serve the panipuri right away and savor the delightful combination of crispy shells, tangy flavors, and spicy goodness.
Note: you can adjust the amount of sweet, tangy and spicy as per your taste. You can also add mint chutney or tamarind chutney for additional flavor.
