Ingredients:
For the koftas:

  • 2 cups grated bottle gourd (loki)
  • 1/2 cup besan (gram flour)
  • 1/4 cup finely chopped onions
  • 2 tablespoons chopped corriander
  • 1 teaspoon grated ginger
  • 1 teaspoon grated garlic
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying
For the gravy:

  • 2 tablespoons oil
  • 1 medium-sized onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon grated ginger
  • 1 teaspoon grated garlic
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder 
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Chopped Corriander for garnish
Instructions:

  • Squeeze out excess moisture from the grated bottle gourd (Loki) and transfer it to a mixing bowl.
  • Add besan (gram flour), finely chopped onions, chopped cilantro, grated ginger, grated garlic, cumin powder, coriander powder, garam masala, and salt to the grated bottle gourd. Mix well to form a dough-like consistency.
  • Shape the mixture into small round koftas and set them aside.
  • Begin by heating oil in a deep pan or kadai over medium heat. As the oil reaches the desired temperature, carefully place the koftas into the hot oil in batches. Deep fry them until they turn golden brown and achieve a crispy texture. Once done, use a slotted spoon to remove the koftas from the oil and transfer them to a paper towel to absorb any excess oil. Keep the koftas aside for now.

  • Take another pan and place it over the heat. Add 2 tablespoons of oil to the pan and allow it to heat up gradually. Add cumin seeds and let them crackle. Then, add finely chopped onions and sauté them until they turn a lovely golden brown color. Next, introduce grated ginger and grated garlic into the pan, and sauté for a minute until the raw aroma diminishes.

  • Now it's time to add the tomato puree to the pan. Cook the mixture for a few minutes until the oil starts to separate. Reduce the heat to low and incorporate turmeric powder, red chili powder, coriander powder, garam masala, and salt into the pan. Thoroughly mix the spices and cook for another 2-3 minutes, allowing them to blend together beautifully.
  • To achieve the desired consistency of the gravy, add water to the pan. Increase the heat to medium and bring the gravy to a gentle boil. Once the gravy is simmering, gently place the fried loki koftas into the pan, ensuring they are fully immersed in the gravy. Allow them to cook in the gravy for 4-5 minutes. Stir gently to coat the koftas with the flavorful gravy.
  • When ready, remove the pan from the heat and garnish with freshly chopped coriander. The mouthwatering Loki Kofta is now ready to be served. Enjoy this delicious dish with roti, naan, or steamed rice.
