To make crispy rava dosa at home, you can follow this easy step:

Ingredients:


  • 1 cup rava (semolina)
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour (maida)
  • 2 tablespoons finely chopped onions
  • 2 tablespoons finely chopped coriander leaves
  • 1 tablespoon finely chopped curry leaves
  • 1 teaspoon cumin seeds
  • 1 teaspoon crushed black peppercorns
  • Salt to taste
  • Oil for cooking


Instructions:


  • In a large mixing bowl, combine rava, rice flour, and all-purpose flour. Mix well.
  • Add water gradually and mix to form a thin batter. The batter should be slightly runny in consistency. Make sure there are no lumps.
  • Add chopped onions, coriander leaves, curry leaves, cumin seeds, crushed black peppercorns, and salt to the batter. Mix everything together.
  • Keep the batter aside to rest for about 15-20 minutes. This helps the rava to absorb the water and the flavors to meld.
  • Heat a non-stick or cast-iron skillet on medium heat. Drizzle some oil and spread it evenly on the surface.
  • Once the skillet is hot, give the batter a good stir and take a ladleful of batter. Pour it in a circular motion starting from the outer edge towards the center to form a thin lace-like pattern.
  • Drizzle a teaspoon of oil around the edges and a few drops over the dosa.
  • Cook the dosa on medium heat until the edges turn golden brown and crispy. You can increase the heat slightly towards the end to make it more crispy.
  • Gently loosen the edges of the dosa with a spatula and fold it in half or roll it into a cylinder.
  • Gently take the dosa off the skillet, serve it hot with coconut chutney or sambar.
  • Repeat the process for the remaining after, making sure to mix the batter well before pouring each dosa. If necessary, add more water to the batter to achieve the desired consistency.
