Vermicelli Upma |
Ingredients:
- 1 cup vermicelli
- 1 onion, chopped
- 1 tomato, chopped
- 1 green chili, chopped
- 1 small bowl green peas
- 1 chopped capsicum
- 1/2 small bowl chopped cabbage
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon urad dal (split black gram)
- 1/2 teaspoon chana dal (split bengal gram)
- 1 sprig of curry leaves
- 2 tablespoons vegetable oil
- 1 tablespoon ghee (clarified butter)
- Salt to taste
- Coriander leaves for garnishing
- Heat a pan over medium heat and add the vermicelli. Roast the vermicelli until it turns golden brown, stirring continuously to prevent burning. Once roasted, remove the vermicelli from the pan and set it aside.
- In the same pan, heat 2 tablespoons of vegetable oil and 1 tablespoon of ghee. Drop the mustard seeds and cumin seeds into the pan and allow them to crackle and pop.
- Add the urad dal and chana dal and sauté until they turn golden brown.
- Add the chopped onion, green chili, and curry leaves to the pan and sauté until the onion turns translucent.
- Add the chopped tomato and salt to the pan and sauté for 2-3 minutes until the tomato softens.
- Pour 2 cups of water in the pan and bring it to a boil.
- Once the water comes to a boil, add the roasted vermicelli to the pan and stir well.
- Decrease the heat to low and cover the pan. Let the vermicelli cook for 8-10 minutes until all the water is absorbed and the vermicelli is cooked through.
- Once the vermicelli is cooked, turn off the heat and let it rest for 5 minutes.
- Garnish with coriander leaves and serve hot.
