Bihari-style jackfruit curry, also known as Kathal ki Sabzi, is a delicious and popular dish from the Indian state of Bihar. It features tender jackfruit cooked in a flavorful blend of spices and is often enjoyed with rice or roti. Here's a simple recipe to prepare Bihari-style jackfruit curry:

Ingredients:

  • 2 cups fresh jackfruit, cleaned and chopped into bite-sized pieces
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed or finely chopped (optional)
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder 
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  •    Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • First remove the skin of jackfruit, core, and seeds. Cut the jackfruit into small pieces.
  • Boil the jackfruit pieces in water for 2 to 3 minutes and drain it and keep aside.
  • Place a pan or kadai on the stove and heat oil over medium heat until it reaches the desired temperature. Add boiled pieces of jackfruit and fry it till golden and take it out in one plate. 

  • Now add  in rest hot oil cumin seeds and let them splutter.
  • Toss in the diced onions and saute them until they acquire a rich, golden brown color. Introduce the ginger-garlic paste to the pan and sauté for a minute, allowing the pungent aroma to dissipate.

  • Add the tomato puree or chopped tomatoes and cook until the oil separates from the masala.
  • Incorporate a blend of turmeric powder, red chili powder, coriander powder, cumin powder, and salt into the mixture. Mix well and cook for a couple of minutes to roast the spices.

  • Add the fried jackfruit pieces and mix them with the spice mixture, ensuring they are well coated and add water as you desired to keep consistency of gravy.
  • Reduce the heat to low, cover the pan, and cook for about 20-25 minutes, stirring occasionally. The jackfruit should become tender and well-cooked.
  • Once the jackfruit is cooked, sprinkle garam masala over it and give it a final stir.
  • Garnish with fresh coriander leaves.
  • Your Bihari-style jackfruit curry is now ready to be served! Enjoy it with steamed rice, roti, or any bread of your choice.

Note: You can adjust the spice levels and consistency of the curry according to your preference by adding more or less chili powder and water. Additionally, you can add other vegetables like potatoes or peas to enhance the flavor and texture of the curry.
